Spicy Sweet Potatoes
Serves 4–6
3 large sweet potatoes, peeled
2 TBS Extra Virgin Olive Oil
1 TBS balsamic vinegar
1–2 TBS Haidek's Honey Glaze Rub & Seasoning
Preheat oven to 400°. Cut sweet potatoes into 1 inch cubes. In a large bowl, add sweet potatoes, EVOO, balsamic vinegar, Honey Glaze Rub, tossing to coat. Transfer to a baking sheet and bake, uncovered, until potatoes are tender, about 40–45 minutes, stirring every 15 minutes. Serve warm.
