Oven to Grill Pulled Pork BBQ

Serves 16

  • 1 (10 lbs) pork shoulder with bone

  • 2–3 TBS Haidek's Butcher's Blend Salt

Preheat the oven to 500°. Wrap the pork shoulder in aluminum foil and place in a large, heavy roasting pan. Roast the pork shoulder for 20 minutes at 500°, then reduce heat to 250° and cook for an additional 5 hours, turning every hour. When the pork has about 30 minutes left in the oven, prepare gas or charcoal grill and heat to 300°.

After the total 5 hours, remove foil and rub the pork shoulder with 2–3 TBS of Butcher's Blend Salt. And rub like you mean it! Now roast uncovered on the grill for an additional 20–40 minutes, rotating on all sides. Allow the meat to cool so it can be handled, then transfer to a large bowl. Remove the meat from the bone and using your fingers, finely shred the meat. Serve as-is or with your favorite BBQ sauce.
